Originally from Frankfort, Kentucky, Molly is a graduate of Elon University in North Carolina. She holds a Bachelor of Arts in Spanish with minors in Human Services and Nonviolence Studies. Her interest in local food systems began when her class work and volunteer projects in college exposed her to the stark contrast between her own experiences growing up on a farm with a family who loves to cook, as compared to the access to and knowledge of healthy food in many other communities. After college, Molly completed a year-long Fulbright teaching assistantship in a preschool in Valencia, Spain where she experimented with the Mediterranean diet and explored the Mediterranean beaches. Molly completed two years of service as an AmeriCorps VISTA with SFC before joining The Happy Kitchen/La Cocina Alegre®, and is excited to continue adding healthy recipes to her repertoire, particularly when they involve a cast iron skillet.
